ABV should not be confused with the percentage of a drink that was originally fermented, the amount of sugar in a wash, or the percentage of pure alcohol in a serving. It describes the concentration of ethanol in the liquid.

What Does Alcohol Proof Mean?

In the current U.S. system, proof is twice the percentage of alcohol by volume. The Alcohol and Tobacco Tax and Trade Bureau (TTB) gives the same relationship in its distilled spirits guidance:

ABV = U.S. proof / 2

The arithmetic conversion does not correct a bad measurement. If an alcoholmeter reading is affected by temperature or dissolved solids, converting that reading to ABV simply carries the same error into a different unit.

How a Proof Alcoholmeter Works

It floats according to the density of an ethanol-water mixture: denser liquid supports the instrument higher, while a liquid with a higher ethanol concentration generally lets it sink farther. A proof alcoholmeter is different from a brewing hydrometer. A brewing hydrometer measures specific gravity to track dissolved sugar before and during fermentation. It can help estimate alcohol production from the difference between original and final gravity, but it does not directly measure the finished ABV of an unknown fermented drink.

Direct alcoholmeter readings are most useful for clear mixtures made primarily of ethanol and water. Sugar, flavor extracts, fruit solids, glycerin, colorants, and other dissolved materials change density and can produce an apparent proof that differs from true proof. Sweet liqueurs, finished cocktails, beer, wine, and sugary washes generally require a different method or sample preparation.

How to Measure Alcohol Proof Step by Step

1. Check the instrument and sample

Confirm that the alcoholmeter's range covers the expected proof and that it is intended for the sample. Inspect the glass for cracks, loose ballast, or a shifted paper scale. Do not use a damaged instrument.

2. Find the calibration temperature

Read the scale, case, certificate, or manufacturer instructions. Many U.S. proof hydrometers are referenced to 60°F, but other alcoholmeters may be calibrated at 20°C or another temperature. Never assume that a correction table for one reference temperature applies to a differently calibrated instrument.

3. Prepare a clean test cylinder

Use a tall, narrow cylinder that lets the alcoholmeter float freely without touching the bottom or sides. Rinse the cylinder and instrument with a small amount of the sample when appropriate. The stem and bulb should be clean, dry on the outside where required, and free of oily residue.

4. Add a representative sample

Fill the cylinder far enough for the alcoholmeter to float. Avoid foam and splashing, which encourage evaporation and trap bubbles. If the sample was taken from a larger batch, mix that batch appropriately first so the test portion is representative.

5. Lower the alcoholmeter carefully

Hold it by the top of the stem and lower it gently. A light spin can help release small bubbles, but do not push it so far that the stem above the final reading becomes heavily wetted. Wait until it is stable and floating clear of the cylinder wall.

6. Read the correct meniscus

Bring your eye level with the liquid surface. Follow the instrument's instructions for whether the scale is read at the top or bottom of the meniscus. Looking from above or below creates a parallax error. Record all readable scale divisions rather than rounding too early.

7. Record temperature immediately

Measure the sample temperature with a compatible thermometer without warming the cylinder with your hands. Temperature changes liquid density. 8. Apply the correct correction and convert
